The figs of the south – the Guava. This has become my new food addiction. They’re sooooo good. And then there are all the guava by-products: guava jam, guava jelly, guava cheese….yummy. Its sad, because everything is so seasonal, that we’ll have it for like a month, and then it will be gone. I could track the number of months I’ve spent here by the different fruit I’ve enjoyed each month: August – Mango, September and October – Golden Apple, November - ???, December – grapefruit, January – Jamaican apples (didn’t like them very much), February – Starfruit, March – Papaya and Guava…..and of course there are always bananas year round! We have our final exam in Immunology on Monday. Although this course is kind of interesting, the manner in which the material was presented and the information was taught was excruciating. Wacky Jackie lived up to her name in a very bad way. I tried to keep an open mind, but sometimes by the end of a lecture I could seriously feel my blood pressure rising from suppressed rage. This woman was infuriating in the manner in which she presented the material. I can’t stand whiny people who try to justify everything they do (ie. spending 5 min of lecture time explaining why the right powerpoint, or components of it missing – I don’t care why its not there, just continue with the damn lecture). Have some gumption people!
Two days later
I just finished the immuno final! I’m so happy this course is over, maybe my feet will stop dragging with my other courses now. Up next, is Parasitology, and I took a peak at the lectures this past weekend – there are some great pictures! (I like being grossed out – it’s more of that horrifying fascination, when you can’t look away).
I’ve realized that since coming to Grenada, I lost a lot of my creative outlets. I don’t have any commuting to do – so that leaves out the 40 min. of singing I would get daily, and there are no piano’s around for me to play. So a lot of my ‘creative energy’ has been channeled into cooking. Today after my immunu final, I had a cooking marathon. I had bought some chickpea flour and was excited to try it out with spinach. I ended up baking some spicy chickpea-spinach patties that taste a little like falafel (minus the oily frying). Next, I ended up making some sort of noodleless (but not meatless) lasagna with eggplant, tomatoes, and ricotta. Then, I baked up my chicken for the next few days, along with some roasted pumpkin (yum). Needless to say, I am completely exhausted.
Two hours later
Ohmigod – its MANGOTIME here on the island (mangos are my favourite). I just came back to the dorm with 8 mangos. I think I’ll be a fruitarian for the next couple of days…….excuse me while I go power-up the blender….
